SPANISH FLAIR - DULCE DE LECHE CUPCAKES

First things first, what the heck is dulce de leche? It means 'milk sweet' in Spanish, and basically it's a thick rich sauce made from caramelized milk. Especially popular in the American countries, dulce le leche (DDL) is also the basis for the elaboration of many sweets and desserts in Argentine, Uruguayan and Chilean cuisine.
Thank you, Mr. Wiki for the info. It seems simple, caramelized milk - usually the usual canned condensed milk is used to make home made DDL, but reading the instructions and the many versions of making it just scared the ponytails outta me! Still, my heart was set to make DDL by hook or by crook, simply because the sound of it spells absolute decadence!

After four (can you believe it? FOUR!) failures while making DDL in  various methods, my caramel milk finally came together at my fifth try. I'm not saying that the last try was the least nerve-wrecking, but at least, it was a success. Stirred a can of susu pekat in my teflon pan for more than half an hour till my right hand was shaking while I took this photo!

Since it took me too much time making the DDL, I was in a big rush to attend my aunty's iftar do. It didn't help either that my oven stopped working halfway! Yeah, I have a temperamental oven. After pujuk-pujuk the oven for a while, like a light from the heavens shining upon my oven, the bulb turned on! Haha, continue baking lah, thankfully tak bantat!

I rushed to Mak Yuh's house just 5 minutes before the azan call. The cupcakes were still piping hot, and I had to bring my container of frosting and sprinkles to her house so that I can do my decorations over there. After our scrumptious dinner, the little ones were already bugging me about those cuppies. Tak sabar-sabar, I've never had so many audience watching me making my cupcakes! You can imagine how kecoh it was to have 8 little kiddies around you and begging and whining literally in your ears.

In the end, after I frosted the cuppies, I let each one of them put chocolate sprinkles and colourful confettis on them. All hell broke loose - the shoving and shouting, 8 pairs of eager hands all fighting for space. I'm surprised no cuppies were hurt in the process.

After all that chaos, managed to save one for myself. Was looking for the right background and setting to take a decent photo, saw the casserole lid, alah bolehlah! So guys, there you have it. My very first, very beautiful Spanish Flair - dulce de leche cupcakes with dulce de leche frosting. Mmm, mmm, delicioso!

DOUBLE DATES

Ever since my mother trusted me with her oven mitts, she let me bake the family favourite cakes for Eid. I can't exactly remember when, but that's only a couple of years ago, before I got hitched to my man. Our Raya wouldn't be complete without my mom's date loaf. I'd be making at least 3 of this on Raya eve - one for the main table, one for grandma, and one to be sliced and distributed to the neighbours while we exchanged tupperwares of raya cookies and cakes.

I don't have a photo of my previous bakes, but cosmetically, it isn't an impressive looking cake. It isn't really a cake anyway, more like a stout crumbly bread with a texture of a moist fruit cake, only more fantastically tasty. This coming from a person who hates fruit cakes with all her heart, mind you. But people do love my date loaf, no matter how I decorate them - with chopped white chocolate, almond flakes or colourful sprinkles.
Here's my cupcake version, topped with caramel buttercream frosting.


The combination of dates and soft cinnamon is just amazing, my kitchen smells heavenly the whole day! For added crunch, I added chopped almonds as mix-in.


Made these for iftar the the in laws. As usual, no time to decorate the cuppies in fancy designs. A simple swirl would just have to do, but for orders, I think I might have to get into some raya spirit or mood to be inspired. Any original ideas, anyone?

Wani's feedback on my cupcakes was nothing short but glowing. Her own words (via sms) were "nyummylicious, "the icing doesn't give you headaches" and *gasp* even better than other cupcakes she tasted before! Now, that makes all the hard work really worthwhile. So sweet of you Wani, my little postman (personal joke!)

BIG ORDER

I thought that if I could come up with more than a 100 pcs of 8 different types of large cupcakes in one night, 24 pcs of 4 types should be no sweat, right?

Wrong! Sweat I did! The strawberries that I got from Tesco were lousy and most of them were badly bruised. No wonder they were so cheap!


Strawberry cupcakes piped with strawberry jam flavoured buttercream frosting. Sedap, tak tipu. The colour wasn't so vibrant coz I prefer to go easy on the coloring on most of my frosting.


Initially I planned to put whole strawberries on the cupcakes, but they're only fit to be eaten if I halve them up. Sorry Kak Wati , I hope you were not let down, and thank you sooooo much for your wonderful feedback.


Coco-kaya-nutties were ordered by Kak Ton. This time I used kaya flavoured buttercream, and I must say, this combination works better than the Italian buttercream that I used before. Definitely a keeper, this frosting. And I also included some coconut milk in the cake to substitute the low fat milk that I usually use, so you can imagine how sinful these cupcakes are!


This one is called 'Chips off the Old Choc' - haha, funny or not? It's basically chocolate moist cupcakes filled with choc chips mix-in, with chocolate buttercream and sprinkled with dual coloured choc chips and choc rice, for Kak Ienan. Strictly for die-hard chocoholics!


Last but not least, the baby of the lot, Salmi ordered LBD for herself.

When I sent these orders to their office, it felt so great when they gushed over them as if they're so precious (padahal plain-looking saja). I was looking forward to see them eat my cupcakes right before me so that I can get some honest feedback, but what they did was to trade in their cupcakes with one another so that the four of them will get different types in their boxes, and would only eat their loot when they get back home! Genius right.

Thank you soooo much for the generous order, you guys! I'm so glad with the rave reviews I'm getting. Order for raya still open, so book fast fast. I know you people are reading this, so tolong komen sikit!

BASKIN KOSKAM

Whenever I have extra cupcakes, like these chocolate chip ones...


... this is the place they go to...


As displayed on the sign, this ice cream place sells ice-cream, ice-blended drinks, toast, snacks and nasi lemak. My hubby comes here for their Hang Tuah coffee and I come here almost every other day for the scrumptious hot nasi lemak either for lunch or dinner, or any meals in between. Nasi lemak & cupcakes almost everyday? Dangerous combination!


This cozy cafe also caters ice-cream for functions and parties. Hmmm, can you see a collaboration between cupcakes and ice-cream coming up? You bet :) Stay tuned


p/s: About the weird title post, it has something to do with my discussion with hubby the other day. I asked him whether this ice-cream joint has a name, and we wondered whether Ice Cream Corner is the official name. We didn't see any other signboards of the name and we didn't ask the owners of the shop too, a lovely lady and her husband who lectures in a university nearby. We fooled around with a few catchy names for it (just for fun) and thought that a perfect name for the shop would be 'Baskin-Koskam', since the name of the shop's location is Taman Koskam :D

SCHOOL DAZE

Last Tuesday, on a whim, you can say I 'committed suicide' by trying to sell my cupcakes at a school function in Prai. It was risky, but somehow I needed the adrenaline rush!

To keep costs very low so that kids can afford my cuppies, I used a base of krimwell for my frosting, and I still think they taste pretty good. They held up quite well too under the hot weather.



On top tier are chocolate cuppies with cookie dough frosting, second tier coconut cupcakes, lemon cupcakes and vanilla with vanilla buttercream (bottom). I made around 50 plus of these small cuppies, selling at RM1 each.

If only I didn't have to get my behind back to my office by noon, I couldn't have sold all my cupcakes. I arrived at the school around 10 am and had to leave by 11.30 am. But it didn't matter that the coconut ones weren't such a hit with the students (they don't know what they're missing!) but at least I know chocolate cuppies are sure bestsellers. The remaining dozen cupcakes or so were sent somewhere else (will post about this place soon) and to my relief, were sold out by Friday.



Surrounded by these friendly young people makes me think and feel young! These girls who helped me with my little makeshift stall were rewarded with a cupcake each. I had so much fun chatting with them!

BLUE ROSES AND PURPLE HAZE

Last Monday was my husband's birthday, so I baked some cupcakes to be shared with his friends. Just simple chocolate cupcakes with vanilla buttercream.



As you can see, the presentation is a little sloppy. I should have used souffle cups for a better hold, and I should really practice more with my lettering.

But good news is, I really got the hang of the rose swirl this time!

MILLI VANILLA

Hi again. My weekend was a blast, a tiring but a fulfilling one.

These are my cupcakes that I made for a function last Saturday. Do excuse the bad lighting in the pics. The first photo I took, it was still dawn and I had to make a move by 7 am to deliver the cuppies.


This cupcake is named Milli Vanilla, haha inspired by that infamous Germany pop act in the late 80s. It's a mix of vanilla and chocolate cupcakes in a batch with choc chips mix in. The frosting is a new recipe, cookie dough! It's delicious, but a little sweet to my liking, so maybe I'll cut down on the sugar the next time I make this. Simple swirls and topped with mini choc chips. I shall use dual coloured choc chips for this cupcake, I just wanted to finish up my regular mini ones first for this batch.


In the second pic, the lighting was bad as well. The hall was a bit dark (nak jimat letrik kot) and I had to take photos fast-fast as well, coz the guests were ravenous already and ready to pounce on the food!


I don't have a cupcake tier yet, so thank goodness for my aunty's ceramic cookie tier!

P/s: I have come up with a somewhat price list for my cupcakes. Phew, finally. It was hard for me to put a price for my creations. Part of me doesn't want to burden customers with the high cost of making cupcakes from scratch, but I do use premium ingredients and so many other aspects go into the making of these cupcakes. Part of me is also telling that my cupcakes have the value, although they look so simple. The price shall be a guide, but a final quotation shall follow suit your order.

FAQ

What is Liplickin'! all about?
Well, for start, you can read the About Liplickin'! page.

Is Liplickin'! halal?
I am a Muslimah, operating from my own kitchen and a pet-free, smoke-free home, and using fresh ingredients from a local bakery supplies shop with the halal certification. If that's good enough, then yes, all our cupcakes are halal.

So, if you work from home and not from a bakery, does the kitchen pass the health test?
I disinfect my kitchen on a daily basis, and I wash my hands like I have OCD. I sure don't want people to get sick eating my cupcake!

Do you do personalized cupcakes with themes and all?
Actually, Liplickin'! is passionate about simplicity. Cake decorating in this century has taken on a whole new level, and it is a serious form of art. However, I see this cupcake craze for something too unique and or too over the top, I'm afraid that the classic feel of having just a good cupcake without all the frills might lose it's charm. For now, the main focus is to keep it simple but delicious. That's what setting us apart. In short, I'm bringin' basic back, baby.

However, tell me how you'd like those personalized cupcakes and to be and we'll see how we can work with it to be special and simple at the same time. Any suggestions are welcomed.

What cupcake flavours do you have?
We offer a wide range of cupcake flavours, which you can view at our menu page at the sidebar on the right. You can also customize your own cupcake, starting from the cup size, right up to the sprinkles type. But remember, keep it simple :)

Can I choose mixed flavours?
Of course, but only if you order for S49 and more. Limit to 2 flavours only please.

Do you have normal sized cakes?
YES! Earlier in the biz, my main focus is cupcakes, but I'm open for normal sized specialty cakes now! More cakes and flavour will be added in the menu soon. For fondant cakes, my skill is very limited therefore I quote a very affordable, amateur price.

How long can cupcakes keep?
The cupcakes can keep unrefrigerated up to 4 day, stored in an air tight container. If kept in the fridge, the cupcake can last up to 7 days. Just take it out again to bring it to room temperature, and it will still taste great.

There is a minimum order, so is there a maximum order as well?
Yes! I am not a full time baker, I have a day job OK! But my hours are flexible. So I can only take a maximum order of 100 cupcakes per day.

Do you do delivery?
Yes, I can deliver your order with minimal charges. Just drop me an email for final price. Alternatively, we can discuss on a convenient pick up point.

Where are your delivery areas?
I can send all around Penang Island & Seberang Perai, Kulim, Sg. Petani & Alor Setar.

How can I place an order with Liplickin'?

How do I book the date?
After you're satisfied with the quoted price, you can make a 50% deposit to secure the date. I will include my CIMB account number in our email correspondence or by sms.

How far in advance should I place an order?
I need at least 3 days to get prepared, especially if the order consists of fresh fruits. But it is best if I get a week's notice from the delivery/pick up date.

What are you other terms and conditions?
The 50% deposit is non-refundable upon last minute cancellation.
Full payment must be made prior to pick up/delivery.
Full refund will be made if I have to make the cancellation.
Price is subject to change without prior notice.

LITTLE BLACK DRESS



Little Black Dress is one of my all time favourite recipe. The chocolate cupcake is moist, tender, not oily. The original recipe calls for coffee granules, contributing to a bittersweet, kinda 'adult' taste to it. Top it off with poured chocolate ganache that will harden, just a bit, resulting in a shiny, glossy finish. Exactly the classy lady with a string of pearls about her neck that I envision while making this (oh yes, I get 'visions').




For this order, I omit the cafe au lait taste coz, *snort snort* children shouldn't have coffee what?

THE STORY BEHIND THE NAME

Just a short one.

When searching for a business name for this cupcakery, most of the names I came up with fell short of being too cliche, and of course, as important as 'location, location, location' in the conventional business, we need a business name that's easy to remember and sticks to the mind.

My business savvy hubby came to the rescue and suggested 'liplickin' inspired by Nunu's tongue action, just at the mere mention of the word 'cupcake'.

So credit goes to them.



This is not liplickin', I think, more like stick your tongue out sideways coz Momma tells you to.

ABOUT LIPLICKIN'!

Salam and hello there dear visitors, welcome to my cupcakery blog. I’ve just jumped into the cupcake business driven by just pure joy of baking treats for other people, so it’s a natural thing to make it more accessible more people! I’m still learning, but I'll make sure that my customers will be getting more of the flavour than just a pretty cupcake.

Liplickin'! is a home-based online cupcakery run by Raggedyanne, who is *gasp* not a certified pastry chef! Just an amateur baker who has a burning passion for cupcakes (burning, haha geddit?) and all things cupcake related - and also has a penchant for sharing with the world her kitchen stories and culinary endeavours (or the lack of it!).

Liplickin'! tries hard not to be your run-of-the-mill online cupcake business by offering fresh flavours and very simple designs (for the time being, hopefully. not a pastry chef, remember?). Although we're all very much in love with the idea of a beautifully decorated thematic cupcake, the philosophy of Liplickin'! inclines towards the classic cupcake look and not something overdone- sometimes a dollop of frosting is all we ever need for a good cupcake! What matters most here at Liplickin'! is the lip -licking taste and the wonderful feeling that you'll get from eating a good cake.


Liplickin'! cupcakes may not win in the looks department, but rest assured that all ingredients used is as fresh and as natural as possible. Each cupcake has a unique name and a story behind it, because when eating a cupcake, sometimes your imagination runs a little while, so feed that imagination!

Liplickin! strives to be experimental in the kitchen and will periodically update the blog with new flavours and ideas. We enjoy a little humour in our lives, so we laugh it off when something funny like a baking hazard happens, coz even the best bakers have bad days!
